A slightly healthier spin on your traditional cheese dip, inspired by Jeff Mauro & the Food Network’s recipe. A great way to eat more squash!
I substituted mozzarella cheese for the spicy pepper jack cheese & omitted the chipotle powder. I had 2% milk so subbed that for the whole milk. You can use frozen chunked butternut squash too.
It looks like & has a texture like a regular cheese sauce so my boys loved it! They ate this up as an after-school snack, dipping tortilla chips in.
