This was dinner last night. I say no-recipe because it is so extremely flexible!
I took 4 whole wheat Naan breads and put them on a big cookie sheet that I sprayed with canola oil cooking spray. I took veggies that I had in the fridge like broccoli & spinach or on the counter (i.e. cherry tomatoes); some veg were a little soft (i.e. orange peppers) which totally works here. I grabbed cheeses I had in the fridge (i.e. shredded cheddar, shredded italian blend and parm) and meats (i.e. turkey pepperoni, leftover cut chicken breast, leftover rubbed pork tenderloin). I had some kalamata olives on hand too which 2 of the 4 members of my family love on pizza & flatbreads.
Put it all together & make-your-own. Pop in the oven at 375 until it browns & the cheese is melted. My flatbread flower design made me smile…it’s the little things during COVID-19 for sure!
